Sticky, balsamic Salmon bites

A fantastic go-to for something easy and extremely flavoursome.
INGREDIENTS
3-4 large salmon fillets - skin on or off it doesn't matter * pending how many you are cooking for
1.5tbs brown sugar
1tbs Dijon mustard
3tbs balsamic vinegar
2tbs butter, melted
1-2tsp garlic, minced
METHOD
Air Fryer option
Cut salmon fillet into cubes
Melt the butter in the microwave and then add the garlic and stir together
Line the air fryer with foil and add the salmon bites and pour over the melted butter & garlic
Cook on 180 degrees for 5mins
Meanwhile in a non-stick frypan on high heat add the balsamic vinegar, mustard and brown sugar and constantly whisk
When it starts to bubble around the edges turn down to low and keep whisking until a stick consistency is formed
When the 5mins is up open the air fryer and paint on the sticky balsamic glaze mix with a brush and cook for a further 2mins at 200 degrees
Oven option
Pre heat the oven to 180 degrees and line a decent sized baking tray with foil
Cut the salmon into bite sized pieces and melt the butter and add in the garlic and coat the salmon bites
Place in the oven for 20mins with foil over the top of the salmon
Make the sticky, balsamic glaze
Brush the glaze onto the salmon bites and leave in the oven for a further 10mins uncovered
Serve with your favourite vegetables. We cooked Broccolini on the BBQ and oven roasted sweet potato chips, PRESTO!
