BANANA & COFFEE LOAF

A delightful loaf to have on hand to impress your visitors or yourself, either way enjoy. SERVES DEPENDING ON YOUR HEAVY AT HAND CUTTING SKILLS.


INGREDIENTS

2 medium bananas

1 shot of espresso coffee

1 cup of GF Flour

1/2 cup of almond meal/flour

1 cup almond/preferred milk

2 eggs

2tsp baking powder

1tsp bicarb soda

1tsp vanilla bean paste

3tbs coconut oil, melted

1/2 cup coconut sugar


ICING

1 shot of espresso

4tbs nutalex or preferred butter

4tbs icing sugar

1tsp vanilla bean paste

Shredded icing, to top with


METHOD

  1. Preheat oven at 180 fan forced

  2. Grease a loaf tin and line it with baking paper

  3. In a large mixing bowl add the dry ingredients and set aside

  4. In a smaller bowl whisk the wet ingredients well and then add to the dry ingredients, folding with a spatular as you go

  5. Pour the mix into your tin and bake for 40-45mins

  6. While the banana loaf is baking, make the icing

  7. With an electric mixer beat the icing ingredients together for roughly 3mins on a med-high or until you can see ingredients have formed a nice thick icing

  8. Once the loaf has finished baking allow it to cool completely before adding the icing, sprinkle with shredded coconut

  9. Enjoy!
